One of my favorite ways to introduce new flavors to our lunchtime routine is by making homemade jam! Homemade jam transforms an ordinary PB & J into something that tastes extraordinary. This Strawberry Rhubarb Chia Seed Jam is thickened with chia seeds, so no need for the traditional pectin. It also uses maple syrup as the sweetener for a sweet, but not overly sweet, jam.
Boring lunch no more!
Strawberry Rhubarb Chia Seed Jam
I used to be afraid of making jam until I learned this simple method. Are you one of those people that thinks making homemade jam is time consuming? I know I used to be. It didn’t seem worth the time to me. That is until I started making my own jam using chia seeds! This strawberry rhubarb chia seed jam is ready in just 15 minutes from start to finish and no fancy tools or ingredients required.
Spread this jam on a sandwich, a bagel, toast, crackers, or use it in smoothies. I would even eat it on ice cream! The flavor of this jam is slightly tart with just the right amount of sweetness. The flavors of strawberry and rhubarb fit perfectly for jam. I used frozen strawberries and frozen rhubarb for an even quicker recipe. All you’ll do is add the fruit to a saucepan with the maple syrup and cook for 10-15 minutes. Once the fruit has broken down into a sauce, remove from heat, add the remaining ingredients, and stir. Transfer to the fridge once cooled and enjoy your homemade jam!
Ingredients
- 1 lb frozen rhubarb
- 1 lb frozen strawberries
- 2/3 cup pure grade A maple syrup
- 1/3 cup chia seeds
- 2 tablespoons vanilla extract
- 1/4 teaspoon sea salt
Instructions
- Add rhubarb, strawberries, and maple syrup to a sauce pan.
- Cook on medium high heat for 10-15 minutes, or until fruit starts to break down. Mash any remaining chunks of fruit until it is all saucy.
- Once fruit has broken down, remove from heat and stir in vanilla extract, salt, and chia seeds.
- Allow to cool and store in the fridge.

Home Chef Tip: Use a potato masher to smash any remaining fruit chunks to achieve a smoother texture.
