Hello, this is Heather from Kitchen Concoctions and I’m excited to share my recipe for Turkey, Spinach, and Cranberry Wraps with you. Since my life is so busy, and like many of you, I am juggling many commitments and obligations, I have to plan every moment of my day, even my week. I carefully schedule appointments and meetings, making sure I can make it across town in horrible traffic and still be on time. I schedule “me time” and time with friends, to ensure that I’m not over exhausting myself and get the recharge I need. And I carefully plan my meals so that I stay on budget and am not left with the “Oh no! What’s for dinner?” question at the end of the day when I am tired.

Even when I am super organized, I usually never think about lunch. I am so busy running errands, trying to make appointments, or I get wrapped up on the phone with a conference call or on the computer with work, that I forget to stop and grab a bite to eat and before I know it, it is already 4pm. Or when I do think to sit down to eat lunch, it is typically something boring, like a peanut butter and jelly sandwich, or leftovers that I’ve already had for what feels like a million times.

Turkey, Spinach, and Cranberry Wraps Recipe

In an effort to take back lunch and make it a tasty part of my day, I’ve been experimenting with several wrap recipes. I love wraps because they are a lighter lunch option, are quick and easy, especially if you eat lunch on the go, and they can be filled with pretty much anything you have on hand.

These Turkey, Spinach, and Cranberry Wraps are such a delicious lunch option that use flavors and indigents that I usually have in my kitchen this time of year. When paired with apple slices and air popped popcorn, this is a simple, light, and satisfying lunch that I am happy to eat again and again!

Turkey, Spinach, and Cranberry Wraps

Lunch doesn't have to boring with this flavorful and light lunch option! These Turkey, Spinach, and Cranberry Wraps use simple pantry staples to create a quick and easy lunch for busy people on the go!

Ingredients

  • 2 tablespoons whipped cream cheese
  • 2 tablespoons reduced-sugar dried cranberries, chopped
  • 1 large whole-wheat or low-carb tortilla
  • 10 fresh spinach leaves
  • 2-3 slices low sodium turkey deli meat

Instructions

  1. In a small bowl, stir together cream cheese and chopped dried cranberries.
  2. Spread cranberry cream cheese evenly over tortilla.
  3. Top cream cheese with spinach leaves and turkey meat. Starting at the bottom of the tortilla, roll tortilla up to secure fillings. Slice tortilla in half, if desired, for serving.

Notes

Home Chef Tip: Serve with apple slices, baby carrots, and/or air popped popcorn, and ice water with a squeeze of fresh lemon, lime, or grapefruit juice for a light and satisfying lunch!

    I made these last night, following the recipe exactly. They were so delicious. I made 10 wraps, wrapped them individually in plastic wrap and refrigerated them overnight. This morning I placed each wrap on a cutting board and cut them into 6 pieces and placed them on a plate, with the pinwheels very close together. I took them all to a church lunch and everyone loved them! Thanks for sharing this yummy recipe!
