When I was younger, my mom had a few recipes that she would make at different seasons throughout the year. This recipe for a One Pot Chicken and Sausage Dish is a classic. My family and I make it now for football Sundays.
One Pot Chicken and Sausage Recipe
This recipe is so easy and you let the oven do all of the work for you. It is the perfect one pot dish for watching football games on Sundays. It is hearty, warm, and comforting and pairs well with a cold beer or two!
Simple, healthy ingredients make this recipe delicious. The chicken is moist and tender and the potatoes soak up all the flavors. This dish is very easy to make. Simply toss everything into a pan and bake. So good! We just had this for dinner last night and everyone enjoyed it. Perfect for sharing with friends and family or you can take the leftovers for lunch with you the next day.
Ingredients
- 2 pounds boneless chicken breasts
- 2 pounds sweet sausage (approx. 8 links, cut into pieces)
- 2 green peppers, sliced
- 1 large onion, sliced
- 6 Yukon Gold potatoes, sliced ¼” thick
- 1 large container chicken broth
- 1 tsp salt
- 1 tsp pepper
- 1 tsp Adobo seasoning
- 1 tsp Oregano
- Pinch crushed red pepper flakes
Instructions
- Preheat oven to 375ºF.
- Place all ingredients in a 13 x 9 baking dish.
- Cover with tin foil.
- Bake for 1 hr and 45 minutes, stirring every 30 minutes
- Uncover and raise the oven temperature to 400ºF.
- Broil for 20 minutes. Stirring to ensure a golden brown on all pieces.
- When meat is golden brown, take out of oven and let rest for 15 minutes before serving.

I cannot tell you how delicious this recipe is. It is hearty, and flavorful, and can be made in larger batches for more people. This is one of those recipes that once you make it for your family and friends, it will be requested time and again. Good, clean, hearty ingredients for a delicious and satisfying fall dinner. Perfect for family meals, get togethers, and football parties.
Pair with a side salad or fresh bread for swabbing the delicious juices for a balanced meal. My son has been known to slice open a piece of Italian bread and stuff with all ingredients for a hoagie. Trust me, this will easily become an instant favorite in your house too.
