Corn on the cob is a summertime favorite and just perfect for a weekend get together! Naturally sweet and filled with nutrition, corn is also a simple and healthy way to pack more produce into any meal. I grew up eating corn covered in butter or margarine. As I started eating healthier years ago, I learned to embrace new ways to flavor it like this Grilled Maple Lime Corn on the Cob recipe which has been a favorite dish of mine for some time, whether for an outdoor cookout or indoor dining any time of the year!

Grilling is one of my favorite ways to enjoy corn on the cob, and it’s also one of the best ways to bring out the natural sweetness in corn to give it a truly special touch. Grilling almost caramelizes the sugars in corn so it adds a nice depth of flavor you won’t get from baking or boiling it. After the corn grills for a few minutes, it’s just a matter of seasoning the corn with a few simple ingredients. I love to use unique ingredients to add to my corn on the cob recipes. For this Grilled Maple Lime Corn on the Cob recipe, I chose natural sweetness from pure maple syrup accented with a touch of citrusy, fresh lime juice which creates the most amazing flavor combination!

All you need to do to make this Grilled Maple Lime Corn on the Cob recipe is shuck some fresh corn, wrap it in foil, and then grill the corn. Grilled Maple Lime Corn on the Cob

Ingredients

  • Fresh corn on the cob (however many ears you want)
  • Limes
  • Pure organic maple syrup
  • Coarse black pepper
  • Sea salt

Instructions

  1. Shuck corn and remove the outer silk, stringy layers.
  2. Wash corn and pat to dry.
  3. Wrap each ear of corn in aluminum foil being sure to cover it completely.
  4. Grill for 25-30 minutes, checking the corn to make sure it has grill marks and is slightly caramelized without burning.
  5. Remove and let cool for 5 minutes before handling.
  6. Remove the aluminum foil. Squeeze a little fresh lime juice over the top using 1/2 a lime per 2 ears of corn.
  7. Drizzle 1/4 tsp of pure maple syrup over each ear of corn.
  8. Rub the maple syrup and lime juice into each ear of corn with your hands, just enough to let the flavors soak in.
  9. Finish each ear off with coarse black pepper and sea salt, if desired.

Notes

Home Chef Tip: Choose smaller ears of corn for quicker grilling and even cooking times. You can also switch out the limes for lemons if you prefer, and feel free to use honey or agave instead of maple syrup for other sweetening options.
