When it comes to French toast, everyone has their own favorite recipe. Varieties range from basic sandwich bread drenched in egg wash to crispy, gourmet loaves drizzled with rich fruit flavors. No matter how it is made, it is always a signature star of any brunch menu!

The secret to making the best French toast is all in choosing your bread – a thick, dense bread like a baguette will be more resistant to getting soggy. It also keeps its shape and texture more than everyday sandwich bread. You want to make sure it is a little less than fresh (aka dry), which helps it stand up to soaking as well. If you can’t find any, an easy cheat is to slice your bread and heat it in an oven warmed to 200°F for 8-10 minutes. This will dry it out nicely.

I don’t like my French toast to be too complex, so I try to keep it basic with a few key flavors that go well together. You can mix up any flavor combination you can think of though. If you want to give it a nice fall kick, why not add in a little pumpkin purée? This particular recipe also happens to be 100% egg free and dairy free, which really lets the flavors shine!

Once you have your bread and liquid mixture ready, all that is left to do is dip and cook! Your dip/cook timing is another important aspect of making the perfect French toast. You want to dip quickly, making sure each side is covered, then place directly into a pre-heated skillet. If you dip for too long or delay cooking, your bread will get soggy, and you don’t want that! Cook each side until browned and a bit crispy, then serve this Maple Vanilla French Toast dusted with powdered sugar and maple syrup. You can also add a little fruit flavor with some banana slices.

Ingredients

  • Loaf of thick, dry bread
  • 1 cup almond milk
  • 1/4 cup flour
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Coconut oil for your pan
  • Powdered sugar for dusting

Instructions

  1. Slice your bread into 1/2 - 1 inch thick pieces.
  2. Whisk together almond milk, flour, maple syrup, vanilla, and cinnamon.
  3. Heat up some coconut oil in a skillet over medium-high heat.
  4. Dip each piece of bread into your milk mixture, then place directly on the skillet.
  5. Cook for 5 minutes, then turn and repeat on the other side.
  6. Continue cooking for a few minutes each side until you have a slightly crispy, browned surface.
  7. Once plated, sprinkle on powdered sugar and drizzle maple syrup. You can also add fruits like bananas or strawberries.
