The fall weather has finally arrived for some. Not for us here in SoCal though, we have schools closing due to a heat wave, while our family across the country is dancing in the rain, lighting fires, and jumping in leaves. So, I’m pretending that it’s fall weather here too. The other night the kids and I watched a movie while sipping hot chocolate. One asked if we could light the fire. Sure, as long as we turn the air-conditioning on high too.
The warm weather isn’t stopping me from making our favorite comfort foods like soup and chili either. Today, I’m sharing my really easy recipe for 5-Ingredient Butternut Squash Soup that’s made in the slow cooker. I love having the house smell like fall, even if the air-conditioning is on.
The best part about this soup is if you have picky eaters like me, you can hide everything by simply puréeing it right in the slow cooker. My kids do love soup, but only if they can dunk bread into it, so this is the perfect hack for us. Because we all know that kids will find that one teeny tiny little bit of onion in anything if given a chance.
It looks so creamy and delicious once cooked and puréed!
Here’s a tip: If you don’t have an immersion blender to blend the soup right there in the slow cooker, use a soup ladle to spoon the soup in batches into the blender. It works just as well to make it smooth and creamy that way.
Ingredients
- 2 butternut squash
- 4 celery stalks
- 1 yellow onion
- vegetable broth (approximately 4 cups)
- Optional: coconut milk and nutmeg to garnish
Instructions
- Chop your butternut squash, onion, and celery, and add to the slow cooker.
- Pour enough vegetable broth over the top to just barely cover the other ingredients.
- Cook on high for 4 hours.
- Use an immersion blender to blend the soup until creamy.
- Serve immediately.
Notes
Home Chef Tip: If you don't have an immersion blender, you can ladle the soup into a regular blender to combine. Also, if you need to leave the soup in the slow cooker longer, you can cook it for 8 hours on low.
