This Watermelon Slushie Margarita is everything you want in a summer cocktail. Watermelon, tequila, lime juice, and triple sec are blended into an icy concoction that’s perfect for summer evenings!
Summer is here! I know this to be true because my favorite summer fruits are back in the grocery store. Cherries, nectarines, blueberries, and watermelon, of course.
I almost never buy a full watermelon. It’s not that we couldn’t eat it all. Mike and I could absolutely devour an entire watermelon. It’s really just that cutting a whole watermelon is more daunting than the most daunting of kitchen tasks, including cleaning a food processor. The worst.
But the other day I walked into the grocery store, saw this enormous pile of watermelons and bought one. Mine. The whole thing. I wanted it, and I’ll deal with the consequences later.
So now it’s later. I’m at home and there’s this watermelon – uncut – sitting on my kitchen counter. It’s staring at me. You know when you buy food without a plan for it and time starts to pass and you still haven’t used it? It drives Mike crazy, but I do it all the time. There’s a package of tempeh and an open can of peas that have been sitting in my fridge for I don’t know how long, but they can’t stare at me like this watermelon can because they’re away.
But it’s been four or five days and that watermelon needs to be eaten, which means I need to cut into it. What am I going to do with an entire watermelon? I take back what I said about Mike and I being able to eat the whole thing. That part was a lie. We absolutely cannot eat an entire watermelon and I feel sick just thinking about it.
But wait! Maybe we don’t have to eat it. Maybe we can drink it. Woah! It’s summer and it’s hot and suddenly all I want is a cool, refreshing drink made with watermelon. So out comes the blender, tequila, lime; all the summer things. Cut up the melon, blend it all together, and this drink is light, sweet, and just too easy. Everything you want in a summer cocktail!
- 3-1/2 cups unseeded watermelon
- ½ cup tequila
- 2 tablespoons lime juice
- 2 tablespoons Triple Sec
- Ice
- Watermelon balls, for garnish (optional)
- Salt, for the rim (optional)
- In a blender, combine watermelon, tequila, lime juice, and Triple Sec. If you didn't refrigerate your watermelon in advance, add 1 cup of ice. Blend until smooth. Taste and adjust according to your liking.
- Wet the rim of your glasses and dip in salt. Stab watermelon balls on a toothpick and top for garnish. (Optional)
