Cauliflower is this magical veggie that can be used to make everything from pizzas, to smoothies, and even sauces! From a distance, cauliflower being used as a sauce sounds off-putting, but it takes on the same texture as traditional Alfredo and is a blank canvas where you can take the flavor profile wherever you would like!
What I love about this dish is that it’s dairy free, egg free, and meat free. It also takes minimal time to prepare, is packed with fiber making it more filling, and replicates a perfect fettuccine Alfredo sans countless calories. If you’re looking to enjoy your favorite bowl of pasta without the hassle of intricate, heavy sauces and unwanted calories, you have to try this healthier classic!
Ingredients
- 1 tbsp oil
- 3 cloves garlic, minced
- 1/2 tsp salt
- 3 cups cauliflower rice
- 2 cups vegetable broth
- 2 tbsp nutritional yeast
- 1 tsp black pepper
- Juice from half a lemon
- 2 cups broccoli
- 2 cups cooked fettuccine
- Vegan shredded parmesan as desired
- Minced parsley as desired
Instructions
- In a pan over medium heat, add olive oil and garlic. Cook for two minutes until translucent.
- Add salt and cauliflower rice, sauté for an additional three minutes.
- Stir in broth, nutritional yeast, and pepper. Cook for an additional three minutes, add the squeeze of lemon.
- Add everything to a food processor or blender, combine until smooth.
- Add back to the pan over medium heat, toss in fettuccine and broccoli.
- Top with parmesan and parsley. Serve immediately.
