Living in Miami, gateway to Latin America, I have no shortage of experience in international cuisine. I spent a good portion of my high school and college years in Mexico doing volunteer work. Not the beach areas or border towns most people first think of when you say Mexico, but in the Sierra Madres Mountains. It is one of the most beautiful places I have ever been. This region is primarily Aztec. After long days, one of my Aztec friends would often cook for us. The food was always amazing, I would literally travel to Mexico just for the food.
Chicken Black Bean Tostadas Aztecas
One of my favorite dishes was what I like to call Tostadas Aztecas. Quickly fried corn tortillas, with a quick slather of mayo, topped with leftover black beans and a sprinkle of queso blanco. I could easily eat three or four in one sitting. They are the perfect late night dinner or afternoon snack. Here in Miami, we like to take them up a notch with some grilled chicken and chopped cilantro.
In my home, we usually make these whenever we have a bit of leftover black beans and chicken. You know those times when you have a little bit of this and a little bit of that, but it’s not really enough for a full meal? Tostadas Aztecas are perfect for those occasions.
Just grab a few corn tortillas (you can fry them yourself or buy some that are already fried) and slather them with mayo. It may sound strange, but the mayo really takes them to the next level. Then add your beans, chicken, cheese, avocado, or whatever else you happen to have on hand and you are in Mexican food heaven.
It’s the perfect quick meal to make from scratch or use up leftovers. Either way, they are delicious.
- 8 fried corn tortillas
- 1/4 cup mayo
- 1-2 cups black beans
- chopped chicken
- queso fresco
- Fry Tortillas.
- Slather with mayo.
- Top with black beans.
- Add toppings as desired.
