Living in Miami, gateway to Latin America, I have no shortage of experience in international cuisine. I spent a good portion of my high school and college years in Mexico doing volunteer work. Not the beach areas or border towns most people first think of when you say Mexico, but in the Sierra Madres Mountains. It is one of the most beautiful places I have ever been. This region is primarily Aztec. After long days, one of my Aztec friends would often cook for us. The food was always amazing, I would literally travel to Mexico just for the food.
What’s your favorite Mexican dish?
One of my favorite dishes was what I like to call Tostadas Aztecas. Quickly fried corn tortillas, with a slather of mayo, topped with leftover black beans and a sprinkle of queso blanco. I could easily eat three or four in one sitting. They are the perfect party appetizer or 30-minute weeknight dinner. Here in Miami, we like to take them up a notch with some grilled chicken and chopped cilantro.
Repurpose leftover chicken and black beans!
In my home, we always make these small bites when we have leftover chicken or black beans. You know those times when you have a little bit of this and a little bit of that, but it’s not really enough for a full meal? This cheap healthy meal is perfect for those occasions.
Just grab a few corn tortillas (you can fry them yourself or buy some that are already fried) and slather them with mayo. It may sound strange, but the mayo really takes them to the next level. Add your beans, chicken, cheese, avocado, or whatever else you happen to have on hand and you are in Mexican food heaven.
- 8 fried corn tortillas
- 1/4 cup mayo
- 1-2 cups black beans
- chopped chicken
- queso fresco
- Fry Tortillas.
- Slather with mayo.
- Top with black beans.
- Add toppings as desired.
Home Chef Tip: Buy your corn tortillas already fried. They are perfect for Tostadas Aztecas and you can crumble any leftovers on taco salads!
