I don’t know about you guys, but this time of year I’m all about the healthy smoothies! I know it seems kind of weird since it’s super cold out and all, but nothing gives me more energy in the morning than a smoothie to start off my day! I’m all about meal prepping at my house to always ensure I have something delicious to eat throughout the week. As someone with celiac disease and intolerances to dairy and eggs, I like to make sure I’m never without something to eat since eating out can be hard. Meal prep is my way to do that.
Smoothies are no different when it comes to my meal prep schedule. I prepare my smoothies by placing the ingredients in mason jars or freezer bags and placing them in the freezer. When I’m ready for a smoothie, all I do is throw the ingredients into the blender with water, almond milk, or juice, and blend. Breakfast is served and I’m ready to conquer my day!
Sunrise Mango Beet Smoothie Recipe
I really love this sunrise mango beet smoothie because it’s full of my favorite fruits and it’s just gorgeous to look at! I’m always more inclined to eat healthy foods if they’re really colorful and beautiful. Don’t you agree? Two tone smoothies may seem a bit complicated, but it’s really just two different flavors of smoothies layered on top of each other. I make my lighter color smoothie first, so in this case it’s our mango smoothie, and then pour it into the drinking glasses. Then I immediately make my darker color smoothie and layer it on top. You don’t even have to clean the blender in between since you’re drinking them in the same sitting, so it’s okay if the flavors blend a little bit!
As you might have guessed, this sunrise mango beet smoothie gets its name from looking just like a sunrise! The bottom layer is filled with delicious mango, banana, and pineapple. The top layer is made of raw beets, banana, and frozen berries. Together, they make the most delightful flavor and a beautiful sunrise!
Ingredients
- 1 mango, diced
- 1/2 frozen banana
- 1/2 cup frozen pineapple
- 1-2 ice cubes
- 1/2 cup water or orange juice
- 1/2 small beet, peeled and diced (about 1/3 cup)
- 1 cup frozen berries (I used strawberries and raspberries)
- 1/2 frozen banana
- 1-2 ice cubes
- 1/2 cup water or orange juice
Instructions
- In a blender, combine mango, banana, pineapple, ice cubes, and half of the water or juice. Blend until smooth. Add the rest of the liquid if the smoothie is too thick. Pour into glasses.
- Add the beet, berries, banana, ice, and half of the water or juice to the blender. Process until smooth. Add the rest of the water if the smoothie is too thick. Pour on top of the mango layer.
- Serve and enjoy!

Home Chef Tip: When your bananas are starting to get ripe, save them by placing them in the freezer for your smoothies!
