Summer Peach, Pear, and Apple Cobbler with Oatmeal Crumble
For me, and I strongly suspect it is the same for so many others, I learned so much from my mom. She is definitely where I get my love of food from because she was an excellent cook. So this recipe is for my mom and for every mom who encouraged a son or daughter to always cook like you love it. Summertime was my mom’s favorite season. I am sure there were lots of good reasons. Every spring my mom and dad would put in a gigantic garden, which meant there would be lots of fresh fruits and vegetables. My mom especially loved peaches and so, by way of my mom, one of my favorite summer flavors is sun-ripened peaches. My mom, may she rest in peace, had a knack for turning ripe peaches into some of the most wonderfully noteworthy and delicious creations.
However, one of her peach recipes stood head and shoulders above the rest. My mother’s peach cobbler was a perennial family favorite with tons of peaches, cinnamon, and her one of a kind buttery pie crust. What’s not to love? But let me say a little something about my mom’s amazingly flaky crust; it was simply a gift from on high, or so I thought when I was younger, and I still do. I am getting dizzy just thinking about it.
But guess what? I have tried my hand and put my very own unique spin on her original recipe, and I have to say, “It ain’t bad at all.” Get a load of my Summer Peach, Pear, and Apple Cobbler with Oatmeal Bourbon Crumble. This takes the best of my mom’s peach cobbler and adds the crunchy and oh-so-munchy of the crisp you would normally find atop of a homemade apple crisp. This is the best kind of culinary mash-up.
This one goes out to my mom for giving me one the best gifts of all. Life. And for giving me my love for creating and enjoying good food. Love to all the moms and I wish you a very happy Mother’s Day!
