Snack time will never be the same when you whip up these deliciously easy, crispy, buttery Strawberry Jam Thumbprint Cookies this week. These melt-in-your-mouth cookies are perfectly soft, irresistibly sweet, and are made with only seven ingredients!
I just love thumbprint cookies! They are so easy to make and are super delicious. These Strawberry Jam Thumbprint Cookies are like a cross between a regular cookie and a shortbread cookie. They are soft, pillow-light cookies filled with a teaspoon of strawberry spread in the center. That sounds delicious, doesn’t it? Every bite you take yields a wonderful contrast of flavor and texture in a simple cookie. It’s bakery-style appearance and impeccable taste is what tempts me to make them again and again.
The preparation for this Strawberry Jam Thumbprint Cookies recipe is pretty straight forward. Cream butter and sugar together. Mix in all the ingredients and knead until it forms a soft dough. The dough should feel firm. It’s the firm texture of the dough that helps the cookies maintain their shape during baking. I have added almond extract to the dough, but feel free to substitute it with vanilla extract or strawberry extract. Whatever flavoring you decide to choose, the cookies are going to taste and smell amazing!

Now that our dough is ready, it’s time to shape. Roll the dough in between your palms until it forms a ball. Using a spoon or something that has a round end, make a ‘thumbprint’ in the center of the dough balls. Chill the dough balls in the fridge for 30-40 minutes. Cookie dough that is chilled before baking will hold its shape much better. Do not bake with un-chilled dough as it will result in thin and flat cookies.
Baking these cookies only takes 12-15 minutes. Once done, remove from the oven and allow the cookies to cool completely. Choose your favorite filling and whisk until smooth. Pipe the filling into the cookies and tada – you are done! To give them a fancy look, finish them off with a white chocolate drizzle. These Strawberry Jam Thumbprint Cookies are only moderately sweet, so don’t worry about going overboard. To guide you through, here is a step-by-step recipe in pictures. It’s my family’s favorite and I am sure these soft and utterly delicious cookies will become your family favorite too.
