Ingredients
- 2 cups all-purpose flour
- 4 tbs cornstarch
- 1 cup unsalted butter
- 1/2 cup sugar
- 2 tsp almond extract
- 1/8 tsp salt
- 1/4 cup strawberry jam
- White chocolate for drizzle, optional
Instructions
- Preheat oven 350ºF.
- Cream butter and sugar until fluffy.
- Add all-purpose flour, cornstarch, and salt to the creamed sugar-butter mixture.
- Pour in almond extract and mix until soft dough forms.
- Evenly divide the dough. Roll the dough in between your palms until it forms a ball.
- Press thumbprint in the center of each ball. Chill the cookie balls in the fridge for 30-40 minutes.
- Bake for 12-15 minutes.
- Remove from oven and allow the cookies to cool on a wire rack.
- Whisk strawberry jam with a spoon until smooth.
- Pipe strawberry jam into the cookies. Do not overfill.
- Melt white chocolate and drizzle in a zigzag pattern over the cookies.
Notes
Home Chef Tip: Cookies will be soft when removed from oven. They harden as they cool. Feel free to substitute raspberry or apricot jam for the strawberry jam in this recipe. Use a plastic bag with the corner cut open to pipe the jam into each cookie.
