I am always on the lookout for new slow cooker meal ideas and one pot marvels. A favorite of mine is this Squash and Turkey One Pot Chili, which is especially satisfying in these cold winter months. It’s a quick meal and only requires one pot, but it tastes like I spent all afternoon cooking. Best of all, it’s packed with veggies and lean protein.
Squash and Turkey One Pot Chili Recipe
What I love about chili is that it’s incredibly easy to change or swap out the ingredients. Sometimes I’ll double everything to make a massive batch or I’ll just increase the meat and spices for a heartier meal. I have tried the recipe with a half can of crushed tomatoes and a half jar of leftover pasta sauce for a slightly richer chili. I’ve also mixed different types of beans for a more interesting flavor and I often use peas instead of corn – but corn just looks so much better with the yellow squash! It’s easy to modify this simple recipe to suit your family’s taste buds.
A handful of shredded cheese (or dollop of sour cream and sprinkling of chopped avocado) is the perfect topping for a cozy bowl of squash and turkey chili. Enjoy by candlelight to make this meal even more special than it already is!
Ingredients
- 2 lbs lean ground turkey
- 1 onion, diced
- 2 red peppers, seeds removed and chopped
- 2 cups corn
- 1 can crushed tomatoes
- 1 can black beans, drained and rinsed
- 4 cups squash, cubed
- 1 clove garlic
- 1/2 tbsp cumin
- 1 tsp allspice
- 1 tbsp chili powder
- 1 tsp chili flakes
- 1 tsp cayenne powder
- 1 tsp paprika
- 1 tsp ground pepper
- 1/2 tsp salt
Instructions
- Brown the meat in a non-stick pot over medium heat.
- Use a spatula to separate the turkey as it's cooking.
- Drain any liquid.
- Add the onion, garlic, and peppers; sauté for 5 minutes.
- Stir in the spice mixture.
- Toss in the squash and can of crushed tomatoes.
- Reduce heat and simmer for 20 minutes, until the squash is tender.
- Finally, add the corn and beans and cook on low heat for another 10 minutes.

Feel free to substitute or remove vegetables. I originally made this without the pepper and I've also substituted peas for the corn. This recipe works well with substitutions and is pretty much foolproof!
