How do you improve upon a classic cocktail?
A traditional Mojito is a mixture of rum, sugar, lime juice, soda water, and mint. Though it may be hard to improve upon a classic, that’s exactly what we are doing today!
Watermelon is one of my absolute favorite summertime fruits, which is why it’s my number one pick for turning this mojito into a seasonal slushie. Because watermelon has decent water content, it freezes and blends almost like a sorbet. Plus, it’s so sweet that you don’t need any added sugar. You will absolutely be tempted to eat it right out of the blender, but don’t because we need to add rum and lime juice first!
Making the Most of Your Watermelon Slushie!
The trick to making a superior watermelon slushie is to skip the ice and freeze your watermelon chunks instead. The frozen melon keeps your drink from getting too watered down when it melts so you’ll always have a perfectly-balanced cocktail.
It may seem like a hassle to wait for your watermelon cubes to freeze (happy hour waits for no one!) so I like to be prepared and always keep it on hand. Every time I buy a watermelon, I just reserve a few cups of cubed melon in a plastic bag and keep it in the freezer. That way I am never more than a few minutes from frozen watermelon mojito bliss!
The other fancy little trick to this tipple is the addition of flavored sparkling water! That’s right—just a splash or two adds enough liquid to make it sippable while adding an extra fruity fizz. Just make sure to choose unsweetened sparkling water if you want to steer clear of added sugars. My favorite variations are lime, strawberry, or coconut!
All that’s left is to garnish your newly *minted* frozen mojito with a fresh watermelon spike and a squeeze of lime!
Ingredients
- 2 cups cubed watermelon
- 1/2 cup sparkling water
- 4 fresh mint leaves, torn
- 2 tbsp lime Juice
- 2 oz light rum
Instructions
- In two tall glasses, muddle 2 torn mint leaves and 1 tbsp lime juice in each glass.
- Add watermelon and rum to a high-speed blender and purée.
- Portion the watermelon mixture between two glasses, stir in sparkling water, and garnish with mint and watermelon cubes!

Home Chef Tip: Add extra pep to your mojito by using a flavored sparkling water like lime or strawberry in your mixture!
