Ingredients
- 8 eggs
- ¼ cup green bell pepper
- ¼ cup red bell pepper
- 1 tsp milk
- ¼ cup smoked gouda cheese + extra to sprinkle on top
- 2 tbsp diced red onion
- ½ cup diced sweet potato
- Fresh cut basil
Instructions
- Cut/dice green pepper, red pepper, onion, and sweet potato.
- Crack eggs and whisk together in a bowl, until evenly mixed.
- Add all remaining ingredients, stir again, then pour into a cast iron skillet.
- Top with shredded gouda.
- Bake at 350ºF for 40 minutes.
- Cool for 5 minutes then cut and serve.
