Your entire family will go crazy for this simple Slow Cooker Pineapple Teriyaki Pork recipe. Inexpensive pork roast is slow cooked with sweet homemade teriyaki sauce, then smothered with a fresh and zesty pineapple relish.
As a working mom, I’m always trying to find easy meals during the week to make sure we aren’t ordering takeout too much. We’re on a fairly tight budget right now, and one of the biggest areas we were spending money on was restaurants. We love food, what can I say? Chinese food is one type of cuisine that I’ve always been a bit uncomfortable cooking, so we’ve always ordered carry out when the craving hit. I recently had an epiphany when I recreated my favorite takeout dish, Mongolian Chicken, in the Crock Pot. It tasted just like one of my favorite Chinese takeout dishes, and I figured that we saved about $15 by making it at home! Plus, less temptation for all of the yummy but unhealthy treats that we love (egg rolls, anyone?)
I’ve been on a mission to recreate our Chinese takeout favorites at home lately. This Slow Cooker Pineapple Teriyaki Pork dish is so very easy to throw together. Every bit of the canned pineapple is used. The juice goes in the crock with the pork, and the leftover pineapple chunks are diced and tossed with lime juice, cilantro, and green onions to make a super easy relish. I like to serve this with instant white rice for a very simple and tasty dinner. Please make sure that you shred the pork, and then leave it in the crock to absorb any leftover juices before serving.

- 1 2-3 lb pork roast
- ⅓ cup soy sauce
- 12 oz can of chunk pineapple
- 1 tsp garlic powder
- ½ tsp ginger
- 1 lime
- 2 tbsp cilantro, finely chopped
- 2 tbsp green onions, finely chopped
- For the pork:
- Add pork, soy sauce, garlic, and ginger to the Crock Pot.
- Pour the juice from the can of pineapple over the pork.
- Add about half of the pineapple chunks to the Crock Pot if desired.
- Cook on low for 8 hours.
- Shred pork with two forks and leave in the Crock Pot to absorb sauce for a minimum of 20 minutes.
- For the pineapple relish:
- Dice the remaining pineapple into small pieces.
- Add the juice of one lime.
- Add cilantro, green onions, and a dash of salt and pepper. Mix well.
- Serve pork over rice, top with pineapple relish.
