Skip the takeout when you come home on busy weeknights to the fabulous flavors of this Slow Cooker Mongolian Chicken. Just like your favorite Asian restaurant, but more delicious, healthier, and a lot more affordable!
In my small town, we don’t have many options for takeout. For someone like me who was used to the luxuries of the city – which included plenty of Asian takeout joints – it was quite the adjustment to not be able to get my fix of Mongolian Chicken whenever my heart so desired. At one point, takeout was my only source of food when I lived in the city, so not having easy access was kind of a big deal. Since my husband married me and moved me out to the country, I’ve become a regular in the kitchen and creating my own versions of favorite foods no longer scares me. Lover of food that I am, I found a way to create my own version of the beloved dish right at home in my favorite kitchen tool: my slow cooker.
Slow Cooker Mongolian Chicken Recipe
To start, I add some thinly sliced chicken breast to a zip closure bag and add in some cornstarch. Then I zip it shut and coat the chicken completely.
In my slow cooker, I add some olive oil, plenty of minced garlic, soy sauce, water, and brown sugar giving it a quick stir.
Next I add in some grated carrots.
And the chicken.
Then I give it another gentle stir; just enough to coat everything. I cook it on high for just a few hours before lifting the lid to inhale the perfect sweet and savory aroma of this Slow Cooker Mongolian Chicken.
This tender, melt in your mouth, full of flavor chicken is then served over rice with plenty of freshly diced green onion. To make it a more complete meal, I like to serve this with a hefty side of garlic sautéed green beans.
Slow Cooker Mongolian Chicken uses just a few simple ingredients with minimal effort before you’re enjoying a better-than-takeout dinner. In fact, I’d even say that making this yourself is easier than ordering and waiting for your takeout to arrive.
Ingredients
- 1.5 pounds thinly sliced boneless skinless chicken breast
- 1/4 cup cornstarch
- 2 tablespoons olive oil
- 2 clove garlic, minced
- 3/4 cup soy sauce
- 3/4 cup water
- 3/4 cup brown sugar
- 1 cup carrots, grated
- green onions, optional garnish
Instructions
- In a large zip closure bag, add cornstarch and chicken. Secure shut and shake to coat chicken completely. Set aside.
- Add olive oil, garlic, soy sauce, water, brown sugar, and carrots to slow cooker and stir to coat.
- Transfer chicken from bag to slow cooker and stir once more to coat.
- Cook on high for 2-3 hours or low for 4-5 hours.
- Serve over a bed of rice and garnish with green onion.
Notes
Home Chef Tip: You can purchase already thin sliced chicken breast at your local grocer at the butcher station. This makes prep time for this dish a breeze!
