Although the Blackened Salmon might seem like the star of this dish; the texture, crunch, and health properties of the Sautéd Zucchini and Sweet Potato Noodles are really what makes this low carb dish complete.

Salmon with Sautéd Zucchini and Sweet Potato Noodles

Easy-prep, protein-packed Blackened Salmon is served on a bed of Sautéd Zucchini and Sweet Potato Noodles and fire-roasted tomatoes. Topped with parmesan cheese, this delicious dish is a flavor sensation dinner guests will love, plus one serving boasts 35 grams of protein and only three grams of fat.

This dish is prepared using Frontier Harvest Alaskan Jack’s Blackened Heat Rub Keta Salmon, already prepared, so you just have to pop it into the oven while you are preparing your zucchini and sweet potato noodles. This meal comes together quickly so it’s perfect for busy weeknights when you’re looking for a healthy dinner that doesn’t take a lot of time.

Ingredients

  • 1-2 oz Frontier Harvest Alaskan Jack's Blackened Heat Rub Keta Salmon
  • 1/2 Zucchini
  • 1 Sweet Potato
  • 1-14.5 oz can Fire Roasted Tomatoes
  • 1 tsp garlic
  • Parmesan Cheese, optional for serving

Instructions

  1. Bake the salmon according to directions on the package.
  2. While the salmon is baking, Spiralize your Zucchini and Sweet Potato.
  3. Heat a non-stick pan and add cooking spray and garlic.
  4. Add the Sweet Potato and Zucchini Noodles, sauté 10 minutes.
  5. Add the Fire Roasted Tomatoes, simmer an additional 10 minutes.
  6. Place the salmon on top and sprinkle with parmesan cheese.

Notes

If you can not find this brand of salmon, replace it with frozen salmon, and cook according to directions.
