Since a little bubbly always helps with celebration, today we are raising our glasses of Rosemary Citrus Champagne Cocktails to new beginnings and new adventures.

That’s why this drink is both deliciously special and very easy to make. With just five simple ingredients, these cocktails can be made for every occasion with no fuss.
Rosemary Citrus Champagne Cocktails
The first step of these champagne cocktails is the rosemary simple syrup. This syrup can be made days in advance. It’s also important to note that the recipe makes more than you’ll need for the cocktails. But no worries! You can keep the syrup for up to one month in the refrigerator, ready and waiting for your next celebration.
Once you have the simple syrup, these cocktails are so quick to make. Freshly squeeze a couple of grapefruits with a citrus squeezer. I found that two large grapefruits were perfect for six cocktails. With so few ingredients, getting the perfect grapefruit is important for this drink. When picking out a grapefruit, make sure that you find one that is reddish in color – the deeper in color, the more intense the flavor will be – and ones that are ready to burst from their skin. The ripe ones will be heavier than they look with a smooth and thin skin.
With the simple syrup made and the perfect grapefruits picked, the final ingredient is the champagne. Because of the sweetness of the simple syrup, I recommend going with an extra dry champagne for this drink. One bottle should evenly fill six flutes.

Ingredients
- 1/2 cup water
- 1/2 cup granulated sugar
- 2 tbsp fresh rosemary + more for garnish
- 8 ounces fresh squeeze grapefruit juice (2 large grapefruit)
- 1 bottle extra dry champagne
Instructions
- Stir together water and sugar in a small sauce pan over medium-high heat.
- Add rosemary and bring to boil.
- Boil for 30 seconds until sugar has dissolved.
- Remove from heat and let steep for 30-60 minutes.
- Strain syrup through a fine mesh strainer and set aside.
- Freshly squeeze two large grapefruits.
- Strain the juice through a fine mesh strainer.
- Stir together grapefruit juice and 3 ounces of rosemary simple syrup.
- Divide evenly into 6 separate champagne glasses.
- Top each glass with champagne.
- Add a spring of fresh rosemary to each glass and serve immediately.
