There was a time when we knew fall was around the corner because kids started back to school and the sun started to sink just a little bit earlier in the evening. Now you know fall is coming because pumpkin spice EVERYTHING starts popping up EVERYWHERE.
It started with pumpkin spice coffee at my favorite international market, then pumpkin spice cream cheese spread at the grocery store, and when I spotted a bottle of pumpkin spice cider, it hit me. The seasons are changing whether we want them to or not.
Pumpkin Spice Sparkling Ice Cream Floats
Why not take the best of two seasons and make delicious creamy Pumpkin Spice Sparkling Ice Cream Floats? We really had a lot of fun with these drinks/dessert concoctions before my kid left for basic training at the end of August. Ice cream floats were a summer favorite in the casa kitchen and I shared my recipe for Boozy Lemon Cream Pie Floats here on SoFabFood recently!
My first thought when creating this recipe was not everyone will be able to find pumpkin spice sparkling cider. Then again maybe you will, but just in case you can’t, we have you covered. You can use traditional sparkling apple cider and add a pinch of pumpkin pie spice. Both versions were a hit with the casa crew.
For my cocktail loving friends, you can add a touch of vanilla vodka for an adult-only treat!
I kept my garnishes simple with whipped cream and a sprinkle of cinnamon but you can get really creative with this recipe. Substitute pumpkin spice or cinnamon ice cream for an extra big fall kick. Crumble crushed pie crust or cookies on top. Heck, grab your favorite fall-inspired sprinkles and let folks customize their own floats.
Ingredients
- Vanilla ice cream
- Pumpkin spice sparkling cider (substitute sparkling apple cider and a pinch of pumpkin pie spice)
- Whipped cream for garnish
- Cinnamon for garnish
Instructions
- Add desired amount of ice cream to chilled glasses.
- Top with cider.
- Garnish with whipped cream and a sprinkle of cinnamon.
- Serve immediately.
Notes
Home Chef Tip: Scoop ice cream onto a parchment lined tray then re-freeze 10-15 minutes to help ice cream keep it's shape better. Chill your glasses to keep everything from melting too fast.
