Today we’re whipping up something so super tasty and easy for breakfast. This buttery, Peppered Goat Cheese, Pear, and Honey Toast is made with just a few ingredients. You’ve got your bread, your butter, your pears and pecans, and honey for drizzling. Don’t forget the pepper! That’s what makes it great.
Earlier this year, Mike and I converted to weekday vegetarians. It started as just an experiment. Would it be difficult? How would it make us feel? And what would we cook, anyway? After a week or two, we got into the groove. I started buying more quinoa, beans, fruits, veggies, and whole grains. I experimented with tofu and tempeh (yes to both). We already eat tons of salad, so turning them into meals was simple. Now, eight months later, we think nothing of it.
Peppered Goat Cheese, Pear, and Honey Toast
Here’s one of my favorite breakfast recipes that can be made in minutes. I’m using pumpernickel bread, but I think anything seedy or whole wheat will do. If you remember to pop your goat cheese out of the fridge beforehand, it’ll be easier to spread, but I wouldn’t worry too much about that step. Goat cheese is soft, toast is warm, so you’ll be just fine.
The more thinly you can slice your pears, the better. I’m talking, get them paper thin. Use a small serrated knife. Technically a pairing knife is proper, or a utility knife, but I have this little serrated knife that I use to cut everything.
Drizzle on the honey just before eating. I’ve seen similar variations with pollen instead of honey, which – if you’re really looking to experiment – you can order online (or ask for at your local specialty grocery store). Sprinkle on. Bite. Enjoy!
Ingredients
- Your sliced bread of choice, such as whole grain or pumpernickel
- Butter, for spreading
- 1 ripe pear, thinly sliced
- Goat cheese block, softened, for spreading
- Pepper, to taste
- Honey, for drizzling
- 1 tablespoon chopped pecans
Instructions
- Toast the bread.
- Butter one side.
- Spread that same side evenly with goat cheese and top with pear slices, a sprinkle of pepper, and a drizzle of honey.
- Finish with toasted pecans.
- Serve immediately.
Notes
Home Chef Tip: If your grocery store is like mine, the pears are always rock hard. Buy them a few days in advance and let them ripen.
