I think we can all agree that tacos are the perfect food. Am I right? It’s got everything you can want in a meal wrapped up in a neat little package. It satisfies crunch cravings; cheese cravings; you crave it, you can put it in a taco! My recipe for Pan-Seared Fish Tacos will satiate your craving for a lighter, more healthful, flavor-packed taco.

How to sear tilapia:

It starts with tilapia filets coated with a blend of spices including cumin, oregano, and ancho chili powder. A bit of sugar helps to caramelize and blacken the fish. This blend of spices adds a nice smokiness that pairs well with the sweetness of the mandarin salsa. The use of different chili peppers throughout the recipe gives this dish a nice amount of heat. You definitely have the option to leave them out, but if you like a little kick, keep them in.

First, you will need to make a paste of the canola oil and spices. This allows for even distribution and cohesive flavor. Next, you will need to coat the fish filet in the spice mixture. Add a little cooking spray to a searing hot well seasoned cast-iron skillet. Then add the fillets and cook on each side until a blackened crust forms.

How to Make Mandarin Salsa:

I don’t think this recipe can be any easier. Definitely, use canned oranges because peeling and sectioning fresh ones is nearly impossible. But if you have the know-how and gumption, go for it! To prepare, simply put all of the ingredients in a bowl and give it a good toss. Done.

Serve these pan-seared fish tacos with the mandarin salsa, fresh avocado, and shredded cabbage for contrasting crunch. You might also like my recipes for Easy Legendary Orange Taco Sauce!

A Few Tips for Making this a 30-Minute Meal:

  • Use store-bought coleslaw mix instead of shredding your own cabbage.
  • Use bottled lime juice.
  • Microwave your tortillas in a damp cloth instead of heating them on the stovetop.
  • Use canned mandarin oranges instead of fresh.
