Some of us might work early in the morning, some of us might be busy chasing after our kids, some of us might be studying hard for exams, and some of us might be attending morning classes. I don’t know about you, but even on my day off, I’m usually out and about running errands and doing chores.
With an early start in the day, we don’t always have time to make breakfast in the morning before we leave the house. That’s why I love the idea of making breakfast ahead of time; that way I can still have breakfast without the worry of being late or having to rush.
This Overnight Chocolate Chia Pudding is slightly sweet, creamy, and chocolaty. It’s like having dessert for breakfast.
How can you resist that, right?
What I love most about this chia pudding is that it’s a no fuss recipe with simple ingredients. It takes only five minutes to make, even less after you’ve made it a few times. Stick the jar in the fridge before going to bed, and by morning, you’ll have breakfast waiting for you.
Does it get better than that?
In a large glass or jar, add chia seeds, sugar, and cocoa powder.
Stir to mix the ingredients until incorporated.
Pour in the vanilla almond milk and stir to evenly distribute the chia seeds. You don’t want the chia seeds to clump together in one place.
Cover the glass or jar, and refrigerate the chia pudding overnight.
Serve the chia pudding cold the next morning with your favorite toppings. I used sweetened shredded coconut, granola, and dried cranberries, but you can easily use fresh fruits and nuts. Customize this chia pudding to your taste.

Home Chef Tip: You can easily change up the flavor of this chia pudding by replacing the cocoa powder with green tea powder or vanilla extract, or by substituting the vanilla almond milk for coconut milk.
