Simple No-Bake High Fiber and Protein Cookies

It happens to all of us; it’s the middle of the afternoon and your energy level is down. If you truly want to boost your energy while enjoying a sweet and salty snack, don’t reach for that candy bar. Reach for these Homemade No-Bake High Fiber and Protein Cookies instead. Besides the added energy level these cookies bring to your system with the protein, they also provide a good amount of fiber. One of the main ingredients in these no-bake cookies is Fiber One® Cereal which is made of whole grain wheat and just a half cup serving provides your body with 14 grams of fiber. These cookies are simple to assemble and you just need to let them sit up in the refrigerator for 30 minutes before you can gobble them up.

We love the high protein these cookies deliver that comes from protein powder and PB2 powdered peanut butter. PB2 has 85% less fat than traditional peanut butter, and there are only 45 calories in two tablespoons with 4 grams of protein. Ingredients

  • 1 cup Fiber One® Cereal
  • 1/4 cup sliced almonds
  • 1/8 cup pepitos
  • 1/8 cup sunflower seeds
  • 1/4 cup dried cranberries
  • 2 scoops protein powder
  • 1 cup PB2 powder, prepared
  • 1/2 cup non sweetened coconut flakes
  • 2 bananas, mushed

Instructions

  1. Prepare your PB2 according to directions so you have one cup peanut butter.
  2. Mush your bananas.
  3. Place all ingredients into a large bowl and mix with your hands, like you're kneading dough.
  4. Roll into small to medium-sized balls.
  5. Place on a wax-lined cookie sheet.
  6. Put in refrigerator for 30 minutes prior to eating.
  7. Store in an air-tight container in refrigerator.

Notes

If you do not have PB2, use Nutella or traditional peanut butter. Look for a high protein, protein powder of your choice.
