We love everything about this Mexican Tater Tot Hot Dish. The flavors of Mexican cuisine meet a classic American comfort food for a dinner solution that the whole family will love. This dish has just the right amount of spicy kick, but you could always take that up a notch by adding jalapeño and some hot sauce; or tone it down a bit by omitting the green chilies. If you’re from the midwest, this is just like a casserole you may have grown up with, and it’s super simple to make. It all cooks up in one pan which makes clean up a breeze, making it even more perfect for busy weeknights.

We love serving this casserole with tortilla chips for an added crunch. Add fresh ingredients on top of the Mexican Tater Tot Hot Dish for even more flavor, and you’ve got yourself a real winner. This dish is really easy to prepare using your favorite taco seasoning and frozen tater tots. Adding black beans amps up the protein and gives it a healthy punch even the picky little ones won’t notice as they devour their tater tot dish. The best part is, you can make this dish ahead of time and pop it into the oven for an easy weeknight meal.

Ingredients

  • 1 lb Ground Beef
  • 1 Small Onion, Chopped
  • 2 Taco Seasoning Packets
  • 1 can Black Bean
  • 12 oz Frozen Corn
  • 1 large can Cream of Chicken Soup
  • 1 can Tomato and Green Chilies
  • 16 ozShredded Cheese
  • 1/2 cup Chopped Tomato
  • 1/4 cup Chopped Red Onion
  • 1/2 cup Shredded Lettuce
  • 1/2 bag Frozen Tater Tots

Instructions

  1. Preheat oven to 350ºF.
  2. Cook your hamburger and small chopped onion together until done.
  3. Add the cream of chicken soup, tomato and green chilies, black beans, frozen corn, and taco seasoning; mix well.
  4. Add 1/2 cup of the shredded cheese into the mixture.
  5. Pour into a clear baking dish.
  6. Top with the frozen tater tots.
  7. Cook for 30 minutes, then remove from oven.
  8. Sprinkle the rest of the cheese over the tater tots and cook an additional 10 minutes until cheese is slightly browned and bubbly.
  9. Top with fresh lettuce, tomatoes, and chopped red onion.
  10. Serve with tortilla chips.

    I am excited to try this today. I am a little annoyed that there is no mention of the size pan to use for this recipe. I believe this is the second time on this site that I have had this issue. If you make this and take a picture of it, it should not be difficult to include the size container you use! Please start posting complete info. Thank you!

      This is a 9" x 13" baking pan, which is standard. So sorry it wasn't clear in the recipe though, We'll be sure to include the pan size moving forward. Thanks for the feedback and we hope you love this dish!

    What size is a large size of Cream of Chicken soup? My store only has it in the 10 1/2 oz. size. Should I use 2 cans?
