Tacos are a weekly staple in my house, and they’re also an easy weeknight dinner for two or a whole family. When you’re ready for a change from good old traditional tacos, these tasty Mexican Street Corn Chicken Tacos combine classic ground chicken tacos with the flavors of Elote, or Mexican street corn. In fact, I love Elote so much that I also shared the recipe for these chicken street corn pizzas last year!
How do you make Mexican Street Corn?
If you’ve never tried or made your own Mexican street corn, it’s easy to do on your barbecue or in a skillet on the stove. I keep it easy – I roast the corn in olive oil and chili powder in a skillet, then toss with lime juice when it’s nice and browned. Then you mix in Cotija cheese and cilantro. Add it on top of ground chicken tacos with spicy mayo dressing, or toss the corn in the mayo dressing to enjoy by itself. Either way, it’s delicious! Is it healthy? Well…that’s not the point. I’ve also made it as a side dish with zucchini mixed in, which is equally delicious!
What’s in the spicy mayo dressing?
With Mexican street corn, you can easily change the spice levels according to your preference. I don’t usually make it too spicy, but I do add quite a bit of chili powder to the corn and then take it easy with adding hot sauce (or in my case, Sriracha) to the spicy mayo dressing.
How will you top your Elote Chicken Tacos?
Load these street corn chicken tacos with your favorite toppings like avocado, lime juice, cilantro, onion, etc. It’s actually so hard to choose because just about anything is good when you put it inside of a tortilla. You could even switch up the meat with other types, but I’m personally a chicken fan. Oh, and the Elote makes great leftovers! This is the type of meal I’ll happily eat on a weekly basis, or even daily if I could.
Ingredients
- 1 lb ground chicken breast
- 1 tbsp fajita seasoning
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tbsp olive oil (or butter)
- 1 can of sweet corn, drained
- 1 tsp chili powder (more to taste)
- 1/2 lime
- Cotija cheese, crumbled
- Cilantro, chopped
- Salt and pepper, to taste
- Corn tortillas
- 1/4 cup full-fat mayo
- 1/4 tsp cumin
- 1/2 tsp paprika
- 1/2 lime
- 1 tsp Sriracha (or desired hot sauce)
Instructions
- Heat olive oil in a skillet over medium heat until hot.
- Add ground chicken and sprinkle with seasonings. Break up with a spatula or wooden spoon and cook through.
- Add to corn tortillas.
- Heat olive oil in a large skillet over medium heat until hot.
- Add the drained corn and sprinkle with seasonings.
- Cook, stirring occasionally, until lightly browned.
- Squeeze in lime juice and add crumbled Cotija cheese and chopped cilantro.
- Add on top of chicken tacos with spicy mayo dressing or enjoy as a side dish.
- Mix all of the ingredients together to your desired level of spice and drizzle on top of assembled tacos.
