I remember my first Valentine’s Day with my husband. We hadn’t been dating long, and he decided to cook me a fabulous dinner. There was salmon, risotto, asparagus, and of course, chocolates. It was such a fun evening, much better than going out. There is just something special about having food made especially for you.
Five years in and we still love cooking for each other. This year I am making my husband these fabulous Meringue Chocolate Kisses. The meringue wraps the chocolate kiss just like a little present.
Meringue Chocolate Kisses for Valentine’s Day
Everyone loves a little chocolate when it comes to Valentine’s Day, and the best part is they are naturally gluten free. As someone with Celiac Disease, I greatly appreciate having treats available that don’t require me to worry about gluten in them!
It only takes a few ingredients, and anyone you give these treats to will feel special. The meringue puffs up perfectly over the chocolate, and because they bake at such a low temperature (you are more drying them out than baking), the chocolate maintains its shape!
I will be honest; they did take a few tries. If your eggs aren’t beat long enough, you will end up with flat meringues. They still taste great, but are not pretty.
I also learned that you want your eggs to be in the “stiff peak” stage before adding your sugar, if they are not, you will again end up with flat meringues. Flat meringues just aren’t as romantic.
For a fun twist, try switching the vanilla extract for peppermint or cinnamon extract. Use dark chocolate or white chocolate kisses!
Whatever your plans are for Valentine’s Day, whether they be a night in or a night out, make these meringues with kisses part of your night. You are sure to make whoever you spend Valentine’s Day with feel loved!
Ingredients
- 3 large egg whites or 1/3 cup egg whites
- 1 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon salt
- 1/2 cup sugar
- 20 chocolate kisses
Instructions
- Preheat oven to 250ºF.
- Whip egg whites, vanilla, cream of tartar, and salt until peaks begin to form.
- While continuing to whip egg whites, add sugar 1 tablespoon at a time.
- After all sugar is combined, whip for 2-3 more minutes. Mixture should be very thick and hold a peak when whisk is dipped in and pulled out.
- Put meringue mixture in large ziplock and cut off corner.
- Place chocolate kisses on baking sheet.
- Pipe meringue around them.
- Bake at 250ºF for 30 minutes.
- Turn off oven and leave for 1 and 1/2 hours or until completely cool.
- Enjoy!

Home Chef Tip: When filling a piping bag, use a cup to hold the piping bag open. It makes it easier to fill and there is less mess!
