Why try homemade microwave kale chips?

It’s no secret that adults and kids alike have those moments of craving something salty and crunchy. It is so easy to reach for that bag of potato chips or pretzels and grab handful after handful until your hand is reaching nothing but the bottom of the bag.

How can you fill that salty and crunchy craving in a more healthy way?

Well, it’s a lot easier than you think! With less than one minute of preparation and five minutes of cook time, you can have your very own homemade salty snack: kale chips!

You might be familiar with kale chips. They can be bought prepackaged at the store for a pretty penny. You may even be familiar with baking kale in the oven for a crispy treat or topping. But there is a good chance you have never tried making this simple, healthy snack in the microwave.

You can make kale chips in the microwave?

I am a blogging mom of three at Vigor it Out who is certified in Childhood Nutrition and Cooking and I love cooking and baking with and for the kids almost every meal.

I know the value of home-cooked food and adding in nutrition wherever possible. Kale is a great source of fiber, antioxidants, and even iron! Homemade kale chips are way more nutritious than prepackaged salty snacks!

While I attempt to have my kids eat as healthy as possible, they are children and I definitely allow realistic indulgences. When potato chips had begun getting requested every single day, I knew something had to be done!

I homeschool the kids, work from home, and didn’t have the time to bake a tray of kale chips one busy day.

Is there a chance that one of my kids’ healthy snack favorites could be made in an even easier way, I wondered. This is how microwave kale chips were born.

How Do You Make Kale Chips in the Microwave?

To make this snack the absolute quickest way possible, begin with prepackaged, sliced, and washed kale. This recipe can also be made with a bundle of fresh kale and a bit more prep time. You will simply need to wash the kale, pat it dry, and cut it up yourself. Even these steps take only a minute or two.

Next, you will add some oil and sea salt on top of the kale and massage it in.

You can use vegetable oil, coconut oil, or avocado oil. I prefer avocado oil as it has a higher smoke point than other oils and there is less of a chance of the microwave breaking down the healthy properties of the oil.

There is a chance of the kale burning in the microwave if it is cooked too long or doesn’t have enough oil. Keep a close eye while cooking it. I find that for three lightly-packed cups of chopped kale (which covers a full dinner plate), five minutes is just enough.

If your kale is still soft after five minutes, cook 30 seconds at a time until crispy to avoid smoke and tiny burn spots. This snack will be done so quickly it is worth a few minutes of extra attention.

Microwave Kale Chips

Ingredients

  • 3 cups loosely-packed washed, dried, and chopped kale
  • 2 tbsp oil
  • 1 pinch sea salt

Instructions

  1. Spread the kale on a large dinner plate.
  2. Drizzle oil of choice (vegetable, avocado, and coconut all work well) over the kale.
  3. Sprinkle with sea salt and massage the oil and salt into the kale.
  4. Microwave on high 5 minutes or just until crispy.

Notes

Home Chef Tip: If you are using fresh kale, wash it thoroughly, dry it, and cut it into bite-sized pieces.
