Start hectic mornings off right with these simple and satisfying Make Ahead Frozen Breakfast Burritos! Eggs, potatoes, black beans, and seasonings wrapped in a flour tortilla, stored in the freezer, and heated up in the morning.
Nothing beats a warm, hearty breakfast made from scratch, right? But when getting out the door to work or school feels the most hectic time of the day, homemade breakfasts are often the first thing to fall through the cracks. Or, if you do have time for breakfast at home every day, it’s easy to fall into the same ruts. When rotating between easy favorites like cereal or yogurt every morning becomes tiring, consider switching it up with these easy, make-ahead frozen breakfast burritos.
You can make a whole batch one weekend, as many as you’d like with just under an hour of prep time, and then enjoy them, one at a time, for weeks to come.
I first made these frozen breakfast burritos for my younger brother who’s about to start his freshman year of college. They’ll be a great quick breakfast for him to pop in his dorm room microwave before he heads to class…that is, if they make it that long! But if that happens, we’ll whip up another batch since they’re so easy.
For a taste test, he tried one on the day I made them, and then tried one after it’d been frozen. He said the microwaved frozen breakfast burritos were just as good as the fresh burrito! One of the great things about homemade breakfast burritos is that they’re easily customizable. I filled these burritos with a spicy skillet potato and black bean mixture, scrambled eggs, and a generous sprinkle of cheddar cheese. Chicken sausage or sautéed peppers would’ve been great additions, and I bet substituting sweet potatoes for the russet potatoes would be DELISH.
To fill the burritos, place one tortilla on a large paper towel and top with scrambled eggs, black bean and potato mixture, and cheddar cheese. Push the filling away from the edges and tuck the sides in, rolling up. Once the tortilla is rolled up, roll the burrito up in the paper towel and then in a small sheet of aluminum foil. Place each completed burrito in a freezer-safe gallon bag and freeze for up to 2 months.
To enjoy, remove the foil lining, microwave the burrito still wrapped in the paper towel for 1 1/2 to 2 minutes, or until the filling is heated through. Top with salsa or sliced avocado and enjoy!
Home Chef Tip: For variations, try sweet potatoes instead of russet potatoes, add chicken or breakfast sausage, or use Colby Jack cheese instead of cheddar.
Ingredients
- 2 tablespoons cooking oil
- 1 pound russet potatoes (about 3 small or 2 medium), diced into small cubes (large chunks will take a long time to cook)
- 1 medium onion, chopped
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 15-ounce can black beans, drained and rinsed
- 9 eggs
- 1 1/2 cups shredded cheddar cheese
- 6 large burrito-sized tortillas
Instructions
- In a large skillet, sautée diced potatoes and onion in cooking oil. Add chili powder, salt, and pepper, and cook for 20-30 minutes over medium-low heat, until potatoes are softened through and beginning to crisp on the outside. Add drained can of black beans and remove potato and black bean mixture to a plate to cool completely.
- In the same skillet, scramble 9 eggs and then let them cool.
- To fill the burritos, place one tortilla on a large paper towel and top with scrambled eggs, black bean & potato mixture, and cheddar cheese. Push the filling away from the edges and tuck the sides in, rolling up. Once the tortilla is rolled up, roll the burrito up in the paper towel and then in a small sheet of aluminum foil. Place each completed burrito in a freezer-safe gallon bag and freeze for up to 2 months.
