Do you ever feel like you are cooking and serving up the same five dishes; especially if you have a picky little eater like I do? Instead of changing the food, I decided to try a colorful twist instead. Hence this Magical Rainbow Mac N Cheese recipe was born!

I am not sure about you, but my son’s favorite food is macaroni and cheese. When that little face looks up at me and asks for ‘teeze’, I can’t help but giggle and smile. I have always loved creating and crafting, but now that skill is being put to the test in the kitchen. I think what I love most is the challenge of making something healthy, but also eye catching so that our supper and snacks are not only delicious, but fun. You will always hear parents telling children not to play with their food, but what is this world coming to if we can’t have a little fun?! Are you with me? Yes? Good!

Magical Rainbow Mac N Cheese

This whole unicorn rainbow trend we are on has really got me motivated to create magical things! What better to start with than the good old classic mac n cheese?

I started with organic mild white cheddar and unsweetened almond milk, added in a few other ingredients for flavor and texture, and then divided the cheese sauce into four bowls. This is so versatile because you could really do whatever colors you want by mixing and playing with different variations. I went classic and did one drop of each color in the box, but you could make your colors richer by adding more. After my pasta was cooked, I separated the noodles into the four bowls until they were covered and then layered them in the serving bowl. My husband kept asking to make sure he could try some too because the cheese sauce smelled so good! Both my guys loved it and this colorful twist on a classic meal will be making an appearance on our dinner table for years to come.

Magical Rainbow Mac N Cheese

Ingredients

  • 2 cups Elbow Macaroni
  • 2 Tablespoons Unsalted Butter
  • 1 1/2 cups Almond Milk
  • 1 tsp Salt
  • 1 1/2 cups Mild White Cheddar Cheese
  • 1/4 cup Parmesan Cheese
  • 2 Tbsp Flour
  • Food Coloring

Instructions

  1. Melt butter, milk, cheese, flour and salt in a pan over medium heat. Stir constantly.
  2. Pour sauce into four containers and add desired food coloring.
  3. Cook macaroni and divide evenly into four cheese sauce bowls until coated.
  4. Arrange in rainbow pattern and enjoy.

Notes

Home Chef Tip: Pair this with a grilled cheese sandwich by melting leftover cheese sauce on your favorite whole wheat bread for a more filling meal.
