Who wants a cheap healthy meal for dinner?
Nothing excites me quite as much as a super fast, healthy meal. The reason why is because as a dietitian, I work with many people who feel like healthy eating has to be time consuming, expensive, and the opposite of delicious. It’s my life goal to help people feel the total opposite because it is 100% possible! This Lemon Dill White Fish is no exception because it’s fresh, sexy, and absolutely mouth watering, but it doesn’t cost a ton, and it takes about 15 minutes to throw together. Add some brown rice or quinoa and a handful of veggies and you have a super filling meal that just can’t be beat.
The other cool thing about this dish is the fact that it only uses three ingredients (other than olive oil, salt, and pepper). You just need a fresh lemon, a few tablespoons of dill, and a beautiful slab of white fish, like tilapia. A few minutes under the broiler makes this white fish fork tender.
I literally cannot think of anything I’d rather eat after a long day of work, with a glass of wine, of course.
Ingredients
- 1 ½ lb white fish (halibut, haddock, cod, tilapia), cut into fillets
- 2 tbsp olive oil
- ½ tsp coarse salt
- ¼ tsp ground black pepper
- 1 medium lemon, wedged
- 2 tbsp chopped fresh dill
Instructions
- Preheat the oven to a low broil.
- Coat a baking dish with cooking spray. Lay fish fillets into the baking dish. Brush with olive oil then sprinkle with salt, and pepper.
- Broil 8-10 minutes, until flakes easily with a fork.
- Squeeze lemon juice onto the fillets and sprinkle with fresh dill. Serve immediately.

Home Chef Tip: While your fish is broiling, microwave some brown rice to serve with it for a full meal.
