Honey Tarragon Roast Radish Salad Recipe
I went with a sweet and slightly creamy dressing for this simple salad, and flavored it with fresh and dried herbs. The flavors of lemon and tarragon pair beautifully with light proteins such as salmon, shrimp, or poached chicken. It can also accompany traditional picnic fare such as sandwiches, crab cakes, or even grilled meats and veggies. If you aren’t a fan of tarragon, or if you’d like to pair the salad with something else, just swap tarragon for another flavorful herb like basil or thyme.
I’ve heard others compare the flavor of roast radishes to red potatoes. In my opinion, they taste a lot more like turnips or rutabaga. Roasting softens radishes a little, but they remain surprisingly crisp and crunchy after cooking. I find that their peppery bite is mellowed a bit in the process, but tastes wonderful against the sweet flavor of honey. I can’t wait to try roasted radishes in more of my recipes. Ingredients
- 2 bunches fresh radish
- 2 teaspoons cooking oil
- 2 tablespoons mayonnaise
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1 teaspoon brown mustard
- 1 tablespoon fresh chives, minced
- 1 teaspoon dried tarragon
- salt and pepper to taste
Instructions
- Preheat oven to 350ºF.
- Wash radishes, remove stems and tails, and slice into halves or quarters to make bite-sized pieces.
- Toss radishes with cooking oil and a sprinkle with salt and pepper.
- Spread on baking sheet and roast 20 - 30 minutes, until slightly brown and tender.
- Set aside to cool to room temperature, then chill in refrigerator for 30 minutes.
- In a small bowl, whisk together mayo, honey, lemon juice, and mustard. Add salt and pepper to taste.
- Toss radishes with dressing, chives, and tarragon.
- Serve cold.
