The recipe is a little time intensive because of all of the chopping of vegetables, but the fresh flavors of this incredibly creamy and hearty soup are totally worth your time and effort.

Loaded Baked Potato Soup

Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour, 20 minutes

Yield: 4-6

Loaded Baked Potato Soup

Ingredients

  • 3 tbsp unsalted butter
  • 1 cup onion, diced
  • 1 caribe pepper, seeded and diced (you can use jalapeños if you prefer more heat)
  • 1/4 cup flour
  • 2 cups low sodium vegetable stock
  • 2 cups milk
  • 1.5 lb potatoes, peeled and diced into fairly small pieces
  • 1 cup shredded Colby Jack cheese
  • 1/2 cup sour cream
  • 1 tbsp pepper
  • 4 slices bacon for topping, optional
  • diced green onions for topping, optional
  • extra shredded Colby Jack cheese for topping, optional

Instructions

  1. Melt butter in a large stock pot.
  2. Dice onion and pepper and sauté on medium heat in the melted butter until tender, about 5-7 minutes.
  3. Add flour and stir to combine; you will have a thick paste at this point.
  4. Add the vegetable stock and milk, stir to make soupy.
  5. Add the potatoes to the pot.
  6. Reduce heat to medium low and simmer for 30-45 minutes, stirring occasionally, or until potatoes are tender.
  7. Add cheese, sour cream, and pepper; stir to combine. Allow to simmer an additional 10 minutes or until cheese is completely melted.
  8. While the soup is simmering, cook your bacon, degrease it on a paper towel, then chop it into little pieces. Set aside.
  9. Dice green onions; set aside.
  10. Remove soup from heat and serve hot topped with additional shredded cheese, bacon, and green onions.

Notes

Home Chef Tip: If you want to cook this soup in your slow cooker, just add all of the ingredients to the pot, stir, cover, and simmer on low for 4-6 hours.

    Not low sodium. Added up all ingredient sodium count after I bought the list from store. Should remove low sodium from key words

      The total sodium in this recipe of just the base ingredients (not the optional serving options) is 1015 mg as written. Since this recipe serves 6-8 people, even if you go on the low end of that spectrum, it's about 170 mg of sodium per bowl, serving size is one bowl. According to this site: https://www.eatthismuch.com/food/view/potato-soup-cup,190005/, an average cup of traditional potato soup has 620 mg of sodium. According to the American Heart Association, the ideal daily intake of sodium is 1500 mg. This soup is delicious and certainly does fall into the low sodium category. Thanks for asking though, we're sure our others readers would like this info as well!
