This Healthier Open Faced Egg Salad Sandwich is made with eggs, low fat mayonnaise, celery, and mustard for a well balanced lunch that’s sure to please!

Healthier Open Faced Egg Salad Sandwich

This healthier Open Faced Egg Salad Sandwich can be enjoyed for breakfast, lunch, or even dinner. The thing we love about this recipe is you won’t walk away from the table feeling sluggish, and this is a great recipe for young and old. We like to serve it on wheat bread with a sprinkle of crushed black pepper for an added flavor boost and great presentation.

This is a well balanced meal you can eat for breakfast or lunch. Add fruit and a crunchy half sour dill with good-for-you probiotics and you're on the way to a healthier you.

Ingredients

  • 4 Hard Boiled Eggs
  • 1/2 cup Light Mayonnaise
  • 3 Celery Stalks, chopped
  • Crushed Black Pepper
  • 2 Slices of Wheat Bread

Instructions

  1. To make the hard boiled eggs:
  2. Place your eggs in a large pot on the stove.
  3. Pour enough cold water in the pot to cover the eggs by one inch.
  4. Turn heat to high.
  5. As soon as the pot boils, turn it off.
  6. Take pot off burner and let sit 8-10 minutes.
  7. Pour most of the water out of the pot.
  8. Dump ice over your eggs, mix them around.
  9. Once they have cooled, peel the eggs, and cut in half, then place in a large bowl
  10. Chop your celery into small pieces.
  11. Toast your bread.
  12. Add the mayonnaise and celery pieces into the bowl and mix well.
  13. Top each piece of bread with your egg salad mixture.
  14. Top it off with crushed black pepper.
  15. Enjoy!
