These Grain-Free Chickpea Peach Cookies are super soft and cake like and will melt in your mouth! They are absolutely awesome plain or with a slathering of peach butter on top.

Grain-free Chickpea Peach Cookies

When I was a freshman in college, I was a fair-weather vegetarian. I never came out and declared it to anyone. Never used those exact words, but I’m thinking those who hung around me knew how I swayed. Having come over the big pond from Abu Dhabi to attend college in Atlanta, I was always broke and so I was a beans-beets-and-eggs-chomping vegetarian while in Atlanta. Though, when I went back home – where it was hard to resist the aroma of my mom’s chicken curry – out went that vegetarian hat. Yes, I know – such blasphemy – right!?

Well, during my vegetarian days, I developed a love for baking with beans – from brownies, to cookies, to faux cheesecakes – beans were my jam! Back then, my roommates would see the empty cans of beans lying around the kitchen counter, when a plate of cookies emerged from the kitchen, and they would politely decline them, without so much as a taste! So much for thinking the college years were the most adventurous ones of our lives – eh?!

Fortunately for me, my daughter is way more adventurous than my college roommates used to be – at least, it might seem so as I hide those cans of beans now – full disclosure not needed – right?! And, as long as she thinks these cookies are super tasty and gobbles them up, she doesn’t have to know that I let her have them for breakfast and don’t bat an eyelid when she grabs a couple after school and chomps on them as I’m getting dinner ready – because they are basically like a bean and egg salad (with a side of sugar)!

If beans are not your thing – then don’t think about the fact that these easy blender cookies have them. Once all the ingredients are blended up, you won’t even know that these were grain free let alone chock full of beans! My mom recently gave me a jar of peach butter which I added into the mix for these cookies – as well as slathered on them when I was ready to eat them. I sure hope y’all give these cookies a try and see how much fun baking with beans can be!

Grain-free Chickpea Peach Cookies

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 12

Grain-free Chickpea Peach Cookies

Ingredients

  • 1-15.5 oz can chickpeas
  • 1 egg
  • 1/3 cup powdered sugar
  • 2 tablespoons peach butter
  • 1 tablespoon almond butter
  • 1 teaspoon pumpkin spice powder
  • 1/8 teaspoon salt
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 375ºF.
  2. Place the chickpeas, egg, powdered sugar, peach butter, and almond butter, into a blender and blend on high until creamy, then add in pumpkin spice powder and salt to the mix and pulse until incorporated.
  3. Dough will be very wet, so, drop spoonfuls onto a parchment-lined baking tray and bake for 15 minutes.
  4. Let cool and enjoy plain or with more peach butter.

Notes

Home Chef Tip: If you don't have chickpeas, you can use navy beans instead with the same delicious results!

      Only if it's important to the actual recipe - ex sodium content. Since these are cookies, we don't provide that info for now. We're working on it for a rebrand though!
