It doesn’t matter what time of year it is, sometimes you just need to take a mental vacation. Imagine sitting on a beach, your toes in the warm sand, and the sound of crystal blue waves gently lulling you into blissful relaxation as you sip an icy drink.
Sounds pretty amazing, doesn’t it? Well, this Frozen Peach Basil Daiquiri is guaranteed to inspire your best day dreams.
Frozen Peach Basil Daiquari
In fact, this recipe was inspired by one of my vendors at the farmers market. We recently chatted about how they get so little time off at the farm, working year round to keep the local markets full of fresh produce. The work they put into their businesses is truly awe inspiring!
So I shopped the market for seasonal produce and whipped up a batch of daiquiris in their honor. Sweet, juicy peaches are the perfect compliment to the slight fruitiness of light rum, and basil adds an extra layer of herbiness which really sets this cocktail apart from your standard frozen concoction.
Speaking of frozen, did you know that the original daiquiri wasn’t the blended cocktail most of us think of? It wasn’t until the 1930’s that the original drink made from rum, lime juice, and sugar was blended with the addition of different fruits.
My biggest advice when making this drink is to experiment with the amounts. Peaches are naturally sweet so too much basil simple syrup can be overpowering, unless that’s your thing. Personally I like to add a little extra lime juice for tartness.
I used fresh peaches for this batch, but frozen peaches work just as well. In fact using frozen fruit keeps your final drink from getting watered down with too much ice. We ended up prepping the ingredients for our daiquiris after the market, then made them the following day for happy hour!
Ingredients
- 1/2 cup sugar
- 1/4 cup packed fresh basil
- 3 cups frozen peaches
- 1 cup light rum
- 1/2 cup peach schnapps
- 1/4 cup fresh lime juice
- Ice
- Peach slices or basil leaves for garnish (optional)
Instructions
- Add sugar and 1/2 cup water to a small sauce pan. Bring to a low boil, stirring until sugar is dissolved.
- Remove saucepan from heat, lightly crush basil, and add to pan.
- Let cool completely, strain basil from syrup.
- Add peaches, rum, liqueur, lime juice, plus desired amount of syrup and ice to blender.
- Blend until smooth.
- Serve immediately in chilled glasses.
Notes
Home Chef Tip: Freeze fresh fruit before blending daiquiris. Less ice means drinks won't get watered down.
