Ingredients

  • 2-3 cups Fresh Fruit, chopped (I used fresh blackberries, raspberries, pineapple, and kiwi)
  • 16 oz Coconut Water
  • Stevia, Honey, Maple Syrup, or other sweetener, if desired

Instructions

  1. Fill pop molds or sleeves with fresh fruit.
  2. Add coconut water. If using sweetener, mix together with coconut water to taste before adding to fruit.
  3. Freeze until solid, about 4 hours or overnight.

Notes

Home Chef Tip: This recipe is so fun to make because it is so adaptable and can change deliciously depending on what fruit you have on hand! These are great with berries of all kinds, watermelon, peaches, kiwi, pineapple, mango, etc.! Using coconut water enhances all of the natural flavors of the fruit so the possibilities are endless!

I love this recipe for several reasons. First, it really is the most refreshing treat ever. I don’t know how coconut water does this, but whenever I ingest that magical stuff on a hot day, I feel like a million bucks after. Plus, they are easy to make and perfect for getting the kids involved. Lastly, they are a great alternative to the super sugary pops you’ll find at the store!

If you don’t have the sleeves for the pops that I used, you can easily make these in a normal popsicle mold with even bigger pieces of fruit. I love how the flavors of the fruit and the coconut water mingle together and enhance each other, creating the most delicious frozen treat!

Not only are these pops delicious, but they are also so pretty! When I open my freezer and see these babies inside I can’t wait to get my hands on them. I also love the idea of making these pops for a summer party or shower and matching the fruit to the decor since they are so gorgeous and colorful. They are great for a crowd since there is no gluten or dairy and the ingredients are all natural.
