Tropical Shrimp Lettuce Wraps from Lemon Tree Dwelling

These colorful, fresh Tropical Shrimp Lettuce Wraps combine the crunch and flavor of fresh fruits and vegetables with the protein power of shrimp flavored with the sweet tang of honey lime soyaki sauce. These deliciously light and refreshing wraps are perfect for a spring or summer meal and they can be ready in about 10 minutes with fresh ingredients from Pick ‘n Save.

  • For Wraps:
  • 8 oz cooked shrimp (small or medium size)
  • ½ red pepper, chopped
  • ½ avocado, chopped
  • ⅓ cup matchstick carrots
  • ¼ cup mango, chopped
  • ¼ cup red onion, chopped
  • ¼ cup pineapple, chopped
  • 6-8 lettuce leaves
  • For soyaki sauce:
  • ⅓ cup soy sauce
  • ⅓ cup teriyaki sauce
  • ⅓ cup rice wine vinegar
  • 1 Tbsp minced garlic (6 cloves)
  • ¾ tsp onion powder
  • ¾ tsp ground ginger
  • 2 Tbsp honey
  • juice of 1 lime
