Here in the southern California high desert, our farmers markets boast plenty of fresh produce all year round. It’s one of my favorite parts about living here. Few things make me happier than a basket full of farm fresh vegetables and fruits I can bring right home to my family.
I love to take my time walking down the rows of booths and getting to know more locals, filling my bags with fresh tomatoes, apples, pears, and herbs along the way. The honey guy knows me by name and always has a jar of my favorite blend ready for me. The bread guy knows I’m good for at least one loaf of his crusty sourdough, which is usually still warm as I add it to my treasures from the day.
Farmers Market Bruschetta Toast Recipe
One of my favorite post-market snacks is this Farmers Market Bruschetta Toast. It has fresh tomatoes and basil spooned over newly baked bread that I’ve just brought through the front door in my canvas bags. To start, I halve several cherry tomatoes and add them to a medium bowl.
Next, I dice up the fresh basil I found in the same stand at my local farmers market.
Then, I lightly drizzle quality olive oil over the tomato mixture.
Add a splash of balsamic vinegar to the bowl and give it all a good toss to combine the flavors.
Lastly, toast a few slices of fresh sourdough bread and top them with a heaping helping of the bruschetta mixture.
I like to sprinkle a dash of sea salt over the top of this Farmers Market Bruschetta Toast too. It brings out the taste of fresh, sweet tomatoes and earthy basil, especially when it’s spooned over delicious, chewy sourdough bread.
This Farmers Market Bruschetta Toast is the perfect way to celebrate spring. It is a delicious way to round out a morning spent talking with local farmers and vendors, all while shopping for fruits and vegetables to get my family through the week. I like to buy enough ingredients to enjoy this tasty recipe throughout the week as a better snack option. The tomato and basil flavor combination is a zesty and satisfying treat without the toast too.
Ingredients
- 1 slice sourdough bread, toasted
- 6-8 cherry tomatoes
- 3-4 basil leaves
- Olive oil
- Balsamic vinegar
- Sea salt (optional)
Instructions
- Slice tomatoes in half and place in a bowl.
- Chop basil and add to bowl.
- Drizzle with olive oil and balsamic vinegar to taste, toss to combine.
- Spoon tomato mixture over toasted sourdough.
- Sprinkle sea salt as desired.
