No-Bake Chocolate Covered Strawberry Cheesecakes
Easy no-bake cheesecakes with a chocolate crumb crust and a chocolate covered strawberry topping.

  • 1¼ cups chocolate cookie crumbs
  • 3 tablespoons butter, melted
  • 1 (8 oz.) package cream cheese, softened
  • 1 teaspoon lemon juice
  • ¾ cup sugar, divided
  • 2 cups heavy whipping cream
  • 1 pound strawberries, halved or quartered
  • 6 ounces chocolate, melted
  1. In a medium bowl, stir together the cookie crumbs and melted butter. Divide the crumbs between 12-14 small Mason jars or dessert dishes.
  2. In a large bowl, beat the cream cheese, lemon juice, and ½ cup of sugar until smooth.
  3. In a separate bowl, beat the whipping cream and ¼ cup sugar until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
  4. Spoon or pipe the cheesecake filling into the dessert dishes, filling about ¾ full. Refrigerate for about 2 hours, or until firm.
  5. Just before serving, arrange the strawberries over the cheesecake filling. Drizzle with melted chocolate and enjoy!
