Grilled Pineapple Jalapeño Mojito
Put a summertime spin on a traditional cocktail with this Grilled Pineapple Jalapeño Mojito. It's a little sweet and a little spicy, with all kinds of smoky goodness.
Serves: 2
  • 2-3 slices fresh pineapple
  • 1 jalapeño pepper
  • ¼ cup sugar
  • 8-10 mint leaves
  • 6 ounces light rum
  • ½ cup fresh lime juice
  • Sparkling water
  1. Lightly grill pineapple and peppers on grill or in a grill pan, set aside.
  2. Chop pineapple into ½ inch pieces. Slice jalapeño.
  3. Add half pineapple, desired amount of jalapeño slices and mint to a cocktail shaker, lightly muddle.
  4. Add rum, lime juice, sugar, and ice.
  5. Shake vigorously and serve over ice in a high ball glass. Top with sparkling water.
  6. Garnish with pineapple and lime wheels.
