Grilled Pineapple Jalapeño Mojito
Put a summertime spin on a traditional cocktail with this Grilled Pineapple Jalapeño Mojito. It's a little sweet and a little spicy, with all kinds of smoky goodness.

Ingredients
2-3 slices fresh pineapple
1 jalapeño pepper
¼ cup sugar
8-10 mint leaves
6 ounces light rum
½ cup fresh lime juice
Sparkling water
Instructions
Lightly grill pineapple and peppers on grill or in a grill pan, set aside.
Chop pineapple into ½ inch pieces. Slice jalapeño.
Add half pineapple, desired amount of jalapeño slices and mint to a cocktail shaker, lightly muddle.
Add rum, lime juice, sugar, and ice.
Shake vigorously and serve over ice in a high ball glass. Top with sparkling water.
Garnish with pineapple and lime wheels.
