Easy Tilapia with Olives and Peppers

Ingredients
  • 2 Tbsp olive oil (divided)
  • 4 tilapia fillets, thawed
  • salt and pepper
  • 2 red bell peppers, sliced
  • 1 onion, thinly sliced
  • ½ cup olives, pitted
  • ½ cup fresh parsley, chopped
  • 2 Tbsp lime juice
Instructions
  1. Heat 1 Tbsp of olive oil in large skillet over medium-high heat.
  2. Season each fish fillet with salt and pepper, then cook until opaque, approximately 4-5 minutes per side.
  3. In a separate skillet, heat the remaining 1 Tbsp olive oil.
  4. Saute the peppers and onions, stirring often, until tender, approximately 8-10 minutes.
  5. Add the olives, ¼ tsp each salt and pepper, parsley, and lime juice to the vegetables, and stir to combine.
  6. Serve the vegetables over the tilapia.
