Simple Egg White Breakfast Quesadillas

A Mexican Fiesta for breakfast that's healthy and fulfilling.

Ingredients
  • 3 Egg Whites
  • 1 Can RO*TEL No Salt Added Tomatoes and Green Chilies
  • Shredded Cheese (We used low fat)
  • JalapeƱos
  • 2 Flour Tortillas
Instructions
  1. Place your egg whites and drained RO*TEL in a microwaveable cup and stir.
  2. Microwave 30 seconds, then stir, and repeat three times.
  3. Lay down a tortilla.
  4. Place egg mixture on top, then layer with cheese and jalapeƱos.
  5. Place another tortilla on top.
  6. Spray a large pan and lay quesadilla into hot pan, grill 5 minutes, then flip and cook another 5 minutes, just until cheese is melted.
  7. Enjoy with your favorite salsa!
Notes
If you have a grill, this can be grilled to get the grill marks.
