This Lightened Up Creamy Tomato Basil Bisque is full of flavor, but light on calories!

Ingredients
  • 2-28.5 oz cans of tomato sauce
  • 1 cup low sodium chicken broth
  • ½ medium sized sweet onion, diced
  • 3 garlic cloves, minced
  • 1 cup fat free half and half
  • 1 tbsp tomato paste
  • ⅓ cup fresh basil, torn into small pieces
  • ¼ cup parmesan cheese
  • ½ tsp Italian seasonings
  • ½ tsp garlic powder
  • salt and pepper to taste
  • 2 tsp olive oil
Instructions
  1. In a large soup pot over medium heat, drizzle your olive oil. When pot is hot, add onions and cook 3-5 minutes or until softened.
  2. Add garlic cloves and cook until fragrant, about 30 seconds. Add tomato paste and stir.
  3. Add canned tomato sauce, chicken broth, and half and half and stir well to combine.
  4. Add basil, parmesan cheese, and seasonings. Use salt and pepper to your tastes.
  5. Let cook over low-medium heat for 15 minutes or until ready to serve.
  6. Flavors intensify the next day, so even better if you make, refrigerate, and then serve the next day!
