Spicy Vegetarian Potato Tortilla Soup

- 10 small red potatoes, quartered
- ¼ cup chopped onion
- 2 garlic cloves, minced
- 3 cups water
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 3 cups canned low sodium vegetable broth
- 1 can no salt added Rotel
- 1 can no salt added red beans
- 1 can no salt added corn
- ⅓ cup carrots, shredded
- Optional for Topping:
- Shredded Cheese
- Sour Cream
- Tortilla Chips
- In a large pot, quick boil 3 cups water on the stovetop. Add potatoes and boil for approximately 15 minutes until tender.
- Add vegetable broth and stir in spices.
- Add all other ingredients, stir, simmer for roughly 15 minutes.
- Serve topped with cheese and sour cream with tortilla chips for scooping, optional.
If you'd like to make this soup in your slow cooker, simply add all ingredients, stir, and simmer on low for 6 hours or high for 3 hours.
