Give your holiday leftovers a delicious makeover when you make this simple Heart Healthy Chicken Leftover Pie recipe using that leftover chicken or turkey and vegetables.

Serves: 5-6
Ingredients
2 cups leftover chicken or turkey, shredded
1 cup green beans, leftover or canned (no salt added)
1 cup corn, leftover or canned (no salt added)
½ cup cooked carrots, leftover or canned (no salt added)
1 can low sodium Cream of Chicken soup
1 cup shredded cheese
1½ cups mashed potatoes (If you don't have any leftover, you can used potato flakes and water.)
Instructions
In a large mixing bowl, add soup, chicken, and vegetables, and stir until well mixed.
Pour the mixture into a 9x9 Pyrex baking dish.
Cover with mashed potatoes.
Sprinkle cheese on top.
Cover with foil and bake in a 375ºF preheated oven for 15 minutes.
Remove foil and bake an additional 5 minutes until cheese is golden.
