Cranberry Orange Basil Crostini with Goat Cheese
 
 
Try this super simple appetizer for your next holiday party, it's ready in 10 minutes! Toasted baguette rounds with a goat cheese spread, a cranberry orange topping, and fresh basil. A drizzle of balsamic vinegar gives these crostini's a tangy bite!

Serves: 16 slices
Ingredients
  • 1 baguette
  • 2 tbsp olive oil
  • 1 cup whole cranberry sauce
  • 1-10 oz can mandarin oranges, drained
  • Sprinkle of ground cinnamon powder
  • ¼ cup goat cheese
  • ¼ cup dried cranberries
  • ¼ cup basil, thinly sliced
  • Sea salt
  • 2 tbsp balsamic glaze
Instructions
  1. Use a griddle to toast the baguette rounds. Drizzle olive oil over griddle, place baguette slices on the griddle. Toast until lightly brown, flip, and toast until golden. Mine took 2-3 minutes on each side. Remove from heat.
  2. While the rounds are toasting, pour the whole cranberry sauce, drained mandarin oranges, cinnamon, and dried cranberries into a medium bowl. Stir to combine. This is the topping.
  3. Spread a generous dollop of goat cheese on each toasted round.
  4. Spoon about one tablespoon worth onto each slice. Try to get an orange on each slice.
  5. Drizzle the balsamic vinegar over the top of each crostini.
  6. Thinly slice the basil and sprinkle it generously over the top of the crostini platter.
  7. Give a few cranks of sea salt over the platter. The salt will bring out all the delicious flavor layers you just built!
  8. Serve warm, enjoy!
