Red Quinoa, Black Bean, and Corn Salad

Ingredients
  • 1 cup Organic Red Quinoa
  • 1 can Organic Black Beans
  • 1 can Organic Sweet Corn
  • 1 pinch Sea Salt
  • ½ cup Red Onion, chopped
  • 1 medium Tomato, Diced
  • 1 can Green Chilies
  • 2 tbsp EVOO
  • 3 tbsp Apple Cider Vinegar
  • ½ tbsp Chili Powder
  • 1 pinch Cayenne Powder
Instructions
  1. To make the dressing, mix the EVOO, vinegar, and seasonings.
  2. For the salad, mix all of the other ingredients together and toss with the dressing.
  3. Serve over a bed of romaine lettuce, in a wrap, or just eat as is.
