Red Quinoa, Black Bean, and Corn Salad

- 1 cup Organic Red Quinoa
- 1 can Organic Black Beans
- 1 can Organic Sweet Corn
- 1 pinch Sea Salt
- ½ cup Red Onion, chopped
- 1 medium Tomato, Diced
- 1 can Green Chilies
- 2 tbsp EVOO
- 3 tbsp Apple Cider Vinegar
- ½ tbsp Chili Powder
- 1 pinch Cayenne Powder
- To make the dressing, mix the EVOO, vinegar, and seasonings.
- For the salad, mix all of the other ingredients together and toss with the dressing.
- Serve over a bed of romaine lettuce, in a wrap, or just eat as is.
