Homemade M&M's® Whoopie Pies

Ingredients
  • For the Sandwich Cookies:
  • 2 cups all-purpose flour
  • 1 large egg
  • ½ cup cocoa powder
  • 1½ tsp baking soda
  • ½ cup no salt butter
  • 1 cup sugar
  • 1 cup milk
  • 1 tsp vanilla extract
  • For the Marshmallow Filling:
  • 1 cup no salt butter
  • 2 cups powdered sugar
  • 2 cups Marshmallow Fluff
  • 2 tsp vanilla extract
  • Add In:
  • 2 cups M&M's®
Instructions
  1. For the Cookies:
  2. Preheat oven to 350ºF.
  3. Line 2 cookie sheets with parchment paper and set aside.
  4. In a medium-sized mixing bowl, mix flour, cocoa powder, and baking soda. Set aside.
  5. In an electric mixer, thoroughly mix the butter and sugar. Add egg and vanilla extract, and mix until combined.
  6. Continue to mix on low while you alternately add the milk and the flour mixture. Stop to push mixture down from sides as needed.
  7. Spoon ¼ cup cookie batter on parchment-lined baking sheets, about 3 inches apart, until all batter is used.
  8. Bake for 13-15 minutes until tops puff up and a toothpick inserted in the center of a cookie comes out clean.
  9. Transfer to a wire rack to cool.
  10. For the Filling:
  11. Blend all ingredients in a large mixing bowl until fluffy and creamy.
  12. For the Whoopie Pies:
  13. Spread the marshmallow filling on the flat side of half of the cookies.
  14. Top filling with M&M's®.
  15. Cover with the remaining cookies, pressing slightly to adhere the second cookie to the filling.
