Homemade M&M's® Whoopie Pies

- For the Sandwich Cookies:
- 2 cups all-purpose flour
- 1 large egg
- ½ cup cocoa powder
- 1½ tsp baking soda
- ½ cup no salt butter
- 1 cup sugar
- 1 cup milk
- 1 tsp vanilla extract
- For the Marshmallow Filling:
- 1 cup no salt butter
- 2 cups powdered sugar
- 2 cups Marshmallow Fluff
- 2 tsp vanilla extract
- Add In:
- 2 cups M&M's®
- For the Cookies:
- Preheat oven to 350ºF.
- Line 2 cookie sheets with parchment paper and set aside.
- In a medium-sized mixing bowl, mix flour, cocoa powder, and baking soda. Set aside.
- In an electric mixer, thoroughly mix the butter and sugar. Add egg and vanilla extract, and mix until combined.
- Continue to mix on low while you alternately add the milk and the flour mixture. Stop to push mixture down from sides as needed.
- Spoon ¼ cup cookie batter on parchment-lined baking sheets, about 3 inches apart, until all batter is used.
- Bake for 13-15 minutes until tops puff up and a toothpick inserted in the center of a cookie comes out clean.
- Transfer to a wire rack to cool.
- For the Filling:
- Blend all ingredients in a large mixing bowl until fluffy and creamy.
- For the Whoopie Pies:
- Spread the marshmallow filling on the flat side of half of the cookies.
- Top filling with M&M's®.
- Cover with the remaining cookies, pressing slightly to adhere the second cookie to the filling.
